I want to buy a rear tyre for my customized pit bike.

The front/rear tyres are both the same size (2.50" - 10") but I wanted to know could I put a 2.75" - 10" on the rim that one of the 2.50" - 10" tyres were on?

quite simply, yes. aslong as you've got a bit of clearance between tyre and chain/swingarm
